What does Kamado Mean?

kamado is a traditional Japanese wood or charcoal oven made of clay. Using clay vessels as cooking devices go back many thousands of years, and have a number of variations. For example: in India, ceramic ovens took on a more cylindrical shape and became what we call today “tandoor” ovens. Simultaneously, the Japanese style became the more oval “kamado.”

During World War II, a number of Americans became fascinated by the heat control and flavor of foods cooked in “kamado” ovens and brought them back to the United States. First came the traditional egg shape, then an oval shape was pioneered by Primo Ceramic Grills.

What are the Benefits of Cooking on Ceramic Grills?

How Do I Control the Heat of a Primo Grill?

Heat in a Primo Ceramic Grill is controlled by air flow through the dome. For example, if you intend to use a Primo Grill to grill meats, you would keep the draft door closed and the top vent open. This encourages heat to move up through the vent, quickly creating very hot temperatures throughout the dome and around the rack area.

If you want a more “low and slow” approach, the top vent and draft door both start fully open, allowing air to move throughout the dome. This slows the climb of temperature and allows you to dial in the exact temperature you need for cooking.
