3 Ways to Enjoy Your Outdoor Kitchen in the Fall

It’s officially fall, and although the weather is getting cooler, we’re lucky to live in an area where we can still enjoy being outside over the next several weeks. Outdoor kitchens aren’t just for the summer! This is the perfect time of year to fire up the grill and make something delicious. We’ve put together a list of three recipes for you to make in your outdoor kitchen this autumn, before the weather starts getting too cold.

1) On Gameday: Herbed Grilled Chicken Wings

  • 4 garlic cloves, finely chopped
  • 1/4 cup fresh oregano, chopped
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup olive oil
  • kosher salt, freshly ground pepper
  • 2 pounds chicken wings

Combine garlic, oregano, rosemary and olive oil in a large resealable plastic bag; season with salt and pepper. Add chicken wings, seal bag, and toss to coat. Chill at least 1 hour. Heat grill to medium heat. Remove the wings from the marinade and grill, turning occasionally, until golden brown and crisp, or about 15 to 20 minutes.

2) With the Kids: Grilled Banana Boats

  • 6 ripe large bananas, unpeeled
  • 6 tablespoons chocolate chips
  • 6 tablespoons miniature marshmallows
  • 3 tablespoons chopped pecans
  • aluminum foil

Cut 6 12-inch pieces of heavy-duty foil. Heat grill to medium heat. With a knife, make a deep lengthwise cut along inside curve of each banana, being careful not to cut all the way through. Open slit to form a pocket. Crimp and shape 1 sheet of foil around each banana, forming boats. Holding each banana in hand, fill pocket with 1 tablespoon chocolate chips, 1 tablespoon marshmallows and 1/2 tablespoon pecans. Return each banana to its foil boat. Seal top of foil, leaving 2 to 3 inches headspace. Place bananas on grill, cover and cook 8 to 10 minutes, or until marshmallows soften.

3) On Halloween: Jack-o’-Lantern Cheeseburgers

  • 1 envelope onion soup mix
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons prepared horseradish
  • 2 teaspoons chili powder
  • 2 1/2 pounds ground beef
  • 10 slices American cheese
  • 10 hamburger buns, split

Heat grill to medium heat. Combine soup mix, ketchup, brown sugar, horseradish and chili powder in a large bowl. Crumble beef over mixture; mix well. Shape into 10 patties. Grill until meat is no longer pink. Cut eyes, nose and mouth out of each cheese slice to create a jack-o’-lantern. Place cheese on burgers and serve on buns.
